Ingredients
- 24g (4 servings) Herbalife Formula 3 Personalised Protein Powder
- 2 small raw beetroots (175g total)
- 1 x 400g tin of chickpeas
- 2 tablespoons coriander, finely chopped
- 2 generous teaspoons ground cumin
- 1 tablespoon tahini paste
- 1 tablespoon lemon juice
- 3 tablespoons extra virgin olive oil
- 1 teaspoon sesame seeds, to garnish
- Handful of coriander leaves, to garnish
Method
- Peel the beetroot, cut into chunks and place in a food processor.
- Drain the chickpeas from the tin but reserve the liquid.
- Place the chickpeas in with the beetroot and add the coriander, cumin, tahini paste, Formula 3 Personalised Protein Powder, lemon juice and olive oil.
- Blend well, adding some of the chickpea tin liquid to loosen the mixture.
- Tip the mixture into a bowl, garnish with sesame seeds and coriander leaves and enjoy.
