Ingredients
- 1 serving (40g) Herbalife Tri Blend Select Banana flavour
- 1 ripe banana
- 80g porridge oats (can use gluten-free)
- 60ml unsweetened almond beverage
- 40g dried apricots
- ½ teaspoon cinnamon
- 4 teaspoons organic coconut sugar
Method
- Preheat the oven to 170°C (150°C Fan).
- Line a baking tray with parchment paper.
- Add all ingredients (reserving 2 teaspoons sugar) to a food processor and blend until you have a thick batter consistency.
- Spoon 1/8 of the mixture onto the sheet and spread out with the back of a spoon forming an 8-centimetre cookie. Repeat with remaining mixture.
- Use the rest of the sugar to sprinkle evenly across all 8 cookies.
- Bake in the oven for approximately 20 minutes, until the cookies are brown and the sugar is caramelised.
- Remove from oven and transfer to a wire rack to cool.
