- 52g (2 servings) Herbalife Formula 1 Vanilla Cream
- 61g (8 servings) Herbalife Beta heart®
- 125g coconut oil
- 150ml honey or agave syrup
- 1 teaspoon vanilla extract
- 500g oat flakes (or a mixture of barley, wheat and rye flakes)
- 100g flaked almonds
- 100g chopped cashew nuts
- 100g desiccated coconut
- 100g pumpkin seeds
- 100g sunflower seeds
- 250g dried fruit (e.g. chopped dried dates, figs, apricots, raisins and sultanas)
Method
- Preheat the oven to 170°C (150°C Fan).
- Melt the coconut oil, honey or agave syrup and vanilla extract together in a small saucepan.
- Mix the oat flakes, almonds, cashew nuts, desiccated coconut, pumpkin seeds and sunflower seeds in a large bowl.
- Pour in the melted coconut oil and honey mixture and stir well until evenly incorporated.
- Spread the muesli out in a large roasting tray and bake for 25 minutes, or until the nuts and grains are a pale golden brown. Stir every 5 minutes so it browns evenly.
- Remove from the oven and leave to cool in the tray, stirring frequently.
- Once cooled, add the dried fruit, Formula 1 Vanilla Cream and Beta heart®. Stir well.
- Transfer to an airtight container and store at room temperature. Keeps well for up to a month.
