Ingredients

  • 52g (2 servings) Herbalife Formula 1 Vanilla Cream
  • 61g (8 servings) Herbalife Beta heart®
  • 125g coconut oil
  • 150ml honey or agave syrup
  • 1 teaspoon vanilla extract
  • 500g oat flakes (or a mixture of barley, wheat and rye flakes)
  • 100g flaked almonds
  • 100g chopped cashew nuts
  • 100g desiccated coconut
  • 100g pumpkin seeds
  • 100g sunflower seeds
  • 250g dried fruit (e.g. chopped dried dates, figs, apricots, raisins and sultanas)

Method

  1. Preheat the oven to 170°C (150°C Fan).
  2. Melt the coconut oil, honey or agave syrup and vanilla extract together in a small saucepan.
  3. Mix the oat flakes, almonds, cashew nuts, desiccated coconut, pumpkin seeds and sunflower seeds in a large bowl.
  4. Pour in the melted coconut oil and honey mixture and stir well until evenly incorporated.
  5. Spread the muesli out in a large roasting tray and bake for 25 minutes, or until the nuts and grains are a pale golden brown. Stir every 5 minutes so it browns evenly.
  6. Remove from the oven and leave to cool in the tray, stirring frequently.
  7. Once cooled, add the dried fruit, Formula 1 Vanilla Cream and Beta heart®. Stir well.
  8. Transfer to an airtight container and store at room temperature. Keeps well for up to a month.
