Crunchy Nutty Muesli
A big batch of toasted muesli that covers a month of breakfasts. Vanilla Cream shake and Beta heart are stirred in once the oats have cooled.
Swap in different nuts, seeds and dried fruit to keep it interesting.
Method
- Preheat the oven to 170° C (150° C Fan).
- Melt the coconut oil, honey or agave syrup and the vanilla extract in a small saucepan.
- Mix the oat flakes, almonds, cashew nuts, coconut and the pumpkin and sunflower seeds in a large bowl.
- Stir in the melted coconut oil and honey (or agave) mixture and stir well until evenly incorporated.
- Spread the muesli out in a large roasting tray and bake in the oven for 25 minutes, or until the nuts and grains are a pale golden brown.
- Stir it in the oven every 5 minutes, so it browns evenly.
- Remove the tray from the oven and leave the muesli in the tray to cool, stirring frequently.
- When it has cooled down, add the dried fruit, Formula 1 Vanilla Cream flavour and Beta heart®.
- Stir and put into an airtight container to store at room temperature. Keeps well for up to a month.
